3 healthy egg recipes

Easter time means time for eggs. We see them everywhere this time of the year. Chocolat eggs and beautiful decorated eggs. But what have eggs to do with easter?

Eggs are symbol for eternity, of resurrection and fertility. It goes back into the christian tradition. The custom of giving eggs at Easter celebrates new life.

Did you know that eggs are a great source of protein? They also contain important minerals as iron, choline, folic acid and the vitamins B2, B12, E and D. Eggs fit perfectly in a healthy diet, and yes as you understand we are not talking about chocolate eggs 😉

Today I will share 3 healthy egg recipes.

  1. Egg salad to use on toast or bread

What you need?
4 eggs
1 teaspoon mustard
2 tablespoons Greek yogurt 0%)
1 small shallot
Chives, finely chopped
Pinch of pepper and curry powder
pepper and salt

Preparation
Cook the eggs in about 10 minutes. In the meanwhile you can chop the shallot. When the eggs are well cooked you can peel them and cut them into pieces. Mix the eggs with the shallot , mustard and yogurt. Add a bit of pepper, salt, paprika and curry powder. Stir well and mix the fresh chives through the salad. Delicious on toast or bread!

2. Tuna egg salad

What you need?
500 green beans
2 eggs
250g cherry tomatoes
300 g tuna in oil
½ red onion
1 clove garlic
4 tablespoon honey-mustard dressing
120g black olives

Preparation
Cook the green beans in boiling salted water for about 8 minutes. In the meanwhile you can cook the eggs for about 8 minutes. Cut the tomatoes and divide the tuna into pieces. Cut the onion into rings and press the garlic.
Mix the beans, tomatoes, tuna, onion, garlic and honey/mustard dressing and add a little bit of salt and pepper.
Perfect for lunch!

Vegetable Omelet

What do you need
4 eggs
12 cherry tomatoes
1 clove garlic
1 red onion
1/2 thinly sliced red chilli
1 teaspoon paprika
Coriander

Preparation
Chop the tomatoes, red onion, red chili and garlic into little pieces. Chop seperately the coriander.
Preheat the pan and add the oliveoil. Cook the garlic, onion , chili and spices for about 3/4 minutes. Then add the tomatoes and let it all fry for a 5 more minutes, before adding the coriander.
The last step is to put the eggs. Continue cooking untill the center of the omelet starts to look dry.

Nice to serve with bread. Enjoy!
